Collection: Ishikawa Prefecture / Shikano Sake Brewery (Tsukigen, Masurao)

Founded in 1819, this brewery is located in Kaga City, Ishikawa Prefecture. Its representative brands are "Toki-kigen" and "Masurao." The name "Toki-kigen" is said to have come from a haiku poem written by the fourth-generation head of the family at a celebration with the villagers one year after a bumper harvest: "The double chrysanthemums and the sake are just right, so is the sake of Toki-kigen."

In brewing, they use water from the "Shirazumizu Well" that springs from the sacred Mount Hakusan, and Yamadanishiki rice that they continue to grow in their own fields, and they are committed to the time-consuming Yamahai brewing method, aiming to produce sake that has a rich taste and a sharp finish.
