Founded in 1894 (Meiji 27), Furusawa Hideyasu, who was born and raised at Furusawa Brewery, which has been producing sake since the mid-Edo period, branched out from the family. The brewery is located in Tokamachi City, Niigata Prefecture, a region famous for producing Uonuma rice, one of Japan's leading rice producing areas, and also known for its heavy snowfall. Since its founding, the brewery has used boiling water from a horizontal well as brewing water, and has been self-polishing high-quality sake rice. Furthermore, to produce high-quality rice koji, all koji rice is hand-washed using a colander, and for ginjo-style sake, all koji rice is pressed slowly and carefully in a tank to minimize stress. The brewery has always made sake without compromise.
